Summer Drink Recipes!

Easy to make cocktails/mocktails during the lockdown. 2 nice and easy summer drink recipe that are a must this season . . . 

BLUE MATCHA GRANITA

BLUE MATCHA GRANITA

PREP TIME:                 5 minutes 

BLEND TIME:   1 minute  FREEZE TIME: 3-4 hours                      

TOTAL TIME:   3-4 hours  EQUIPMENT: ice-cube trays or 9-in x 13-in baking pan

 INGREDIENTS:

1 ½ cups (355 mL) boiling water  1 ½ cups (355 mL) canned coconut milk or whole milk  ¼ cup (48 g) granulated sugar  2 teaspoons blue matcha powder 

sweetened condensed milk (for drizzling)

INSTRUCTIONS:

Place all the ingredients (except for sweetened condensed milk) into the blender jar of your KitchenAid® K400 Blender. Secure lid and turn to speed 2. 

 Pour mixture into ice cube trays and place in freezer until set, about 3-4 hours. 

 When ready to serve granita, place all frozen cubes in the jar of our blender. Secure lid and set to Ice Crush setting. Blend, stopping to scrape the sides of the jar as needed, until no large chunks remain. You can also use the Pulse function.

Divide between 3-4 glasses, drizzle tops with 2-3 Tablespoons of sweetened condensed milk, and serve immediately.

 CHEF’S NOTES:

If using a 9-in x 3-in baking pan, make sure the pan lays on a flat surface in the freezer so it freezes evenly. Also, before blending, use a fork or bench scraper to break mixture into small 2-in pieces that will fit into the blender.

 

WHOLE STRAWBERRY MARGARITA

WHOLE STRAWBERRY MARGARITA

 Serves 4

 Lime Salt

1 tablespoon finely grated lime zest

2 tablespoons high quality course salt

 

Margarita

  • 6 oz (3/4 cup/180ml) silver tequila (100% agave)
  • 4 oz (1/2 cup/120ml) fresh lime juice
  • 2 oz (1/4 cup/60ml) Cointreau or high quality Triple Sec
  • 3 tablespoons pure maple syrup
  • 4 cups (640g) whole strawberries with stems sliced and frozen
  • 1 cup (125g) ice cubes

 To make the lime salt, throw the lime zest and salt into your KitchenAid® coffee grinder or mini

chopper and pulse just a few times until combined.

 To make the margarita, add all of the ingredients except the ice into your KitchenAid® K400 Blender.

Secure the lid, and blend on high for 30 seconds until smooth. Add the ice cubes, and blast for

another 10 to 20 seconds until frosty.
